And I have to admit that the outcome was even better than I'd initially expected. Who would've known? Spicy Southwestern Grilled Wings with Avocado Jalapeno Dressing

Spicy Southwestern Grilled Wings with Avocado Jalapeno Dressing - Just the right combo for when you get a hankering for eating something a little spicy, zesty, and smokey tasting all at the same time...
Gallon zipper bag
Grill or grill pan
small mixing bowl
whisk
2 1/2 pounds Chicken Wings* (wing tips removed)
1/2 cup Olive Oil
1/4 cup Red Wine Vinegar
2 tablespoons Achiote Chili Rub
1 tablespoon Green Salsa Verde
1/2 teaspoon Salt
1/2 teaspoon Pepper
For the Dressing
1 ripe Avocado (removed from skin and pitted)
1 Jalapeno (raw, stem and seeds removed)
1/2 cup gluten-free Mayonnaise
1/2 cup Greek-Style Yogurt
1/2 cup 2% Milk**
1 tablespoon Lime Juice
1 tablespoon Achiote Chili Rub
1 teaspoon Southwestern Seasoning
1/2 teaspoon ground Cumin
dash Cayenne Pepper
For the Wings
In a large resealable zipper bag combine oil, vinegar, seasoning, salsa Verde, salt, and pepper. Close bag and toss lightly to combine the ingredients.
Add chicken to marinade, seal bag and turn to coat the wings.
Refrigerate at least 30 minutes and up to two hours before grilling. Remove chicken from marinade. Discard any remaining marinade.
Grill over medium-high heat 20 to 30 minutes, turning every 5 minutes to brown and crisp the skin. The internal temperature of the wings should reach 165ºF when done.
For the Dressing
Add avocado, jalapeno, mayonnaise, yogurt, and milk in a small blender or blender jar. Pulse until blended and smooth.
Pour mixture into a small bowl, whisk in lime juice, seasoning and spice. Refrigerate until needed.
*According to the USDA, the average uncooked whole chicken wing weighs 102 grams (or 3.5 ounces). For an average person’s appetite for actual chicken meat per serving (six-ounce serving), you’ll need approximately five to six whole chicken wings. Looking to buy enough for a party? **For a thinner dressing add more milk, one tablespoon at a time, until desired consistency.
