A life-long story, condensed...
Aaahhh, brownies… and so many memories – where to start?
First, admittedly, there were those times when my best girlfriends consoled my broken heart with a pan of brownies (bless those girls). While I wept, fork in hand, I ate chocolatey goodness (take that, Ricky) while crying my eyes out. Of course, there were hugs, lots of support and kind words, too (from my girlfriends), and tissues – lots of tissues. The brownies and girlfriends were great, but “Ricky,” seriously? What was I thinking?
Then - I remember nights in college cramming for exams with my class notes spread across the kitchen table beneath a pan of warm brownies to get me through the hours ahead.
And the times when I’d bake up a quick batch of brownies, shove the pan into a paper bag, wrap it all up in kitchen towels to keep them warm, then pack them along with a thermos of cold milk into my little green Ford step-side pickup. I’d drive them to the Shell gas station to surprise my (new) boyfriend at work, where we’d devour the whole pan of brownies during his shift between taking care of customers.
Brownies were always an easy dessert to whip up for my new boyfriend-turned-hubby to snack on after work or on chilly fall evenings when he returned from the woods after hunting.
Besides potatoes, they were one of the only things I could hold down during the first three months of pregnancy. Go figure. 🤢
There were silly times when dear hubby and his younger brother portrayed make-shift Julia Childs – donning aprons and oven mitts, whipping up fresh brownie batches to snack on after eating box Mac and Cheese.
I’ll never forget that time camping when the animals got into that old blue cooler. Yep, you guessed it. They went straight for the brownies I’d brought along.
Afternoons, when my kids chowed down pan-fulls of brownie bites, I’d made for them in mini-muffin pans for after-school treats.
Sunday evening traditions when our family watched movies and ate brownies topped with double scoops of old-fashioned vanilla ice cream. It was a time when we could care less about calories, movies were suitable for everyone, and the world was much less complicated.
By now, I’m sure you’re getting the picture. Brownies in any variety have always been a favorite.
That said, if there were such a thing as brownie heaven, you’d swear you found it with this simple recipe for Strawberry & Chocolate Ganache Smothered Gluten-Free Brownies. Its smooth texture and deep chocolate flavor make it the perfect sweet course to keep at the front of your digital recipe file, so you’re never far from a delicious dessert treat!
To make the brownies:
For your recipe success, I encourage you to read the KITCHEN NOTES included in the recipe card on the website post before beginning. You’ll see asterisks (*) below, noting where those tips may be helpful.
Preheat oven to 350°F (325°F if using a glass or dark metal pan). Grease, then line an 8x8-inch square baking pan with parchment paper that extends above the upper edges of the pan. *
Melt 10 tablespoons of butter* in a large bowl (or for non-dairy, replace the butter with vegetable oil), and let it cool until it is still liquid but not hot. Once cooled, add 3 eggs* and whisk until combined. Stir in 1 box of gluten-free brownie mix, using a large spoon or rubber spatula, until the dry mix is incorporated, then fold in 1 cup of chocolate chips. Spread the batter evenly into a prepared 8x8 baking pan lined with parchment paper.
*Bake using the times and temperatures recommended below:
Light metal pan – 350°F – 35-40 minutes
Dark metal pan – 325°F – 30-35 minutes
Glass pan – 325°F – 40-45 minutes
When the brownies are done, a toothpick inserted in the center will show a few moist crumbs clinging to it but no raw batter. Cool for 15 to 30 minutes.
Next, you’ll need 2 cups of strawberries. Remove the stems from the strawberries* and cut them into uniform-sized halves or quarters if they’re still too large. Top the brownies with the strawberries, pressing them slightly into the surface to keep them in place.
To make the ganache:
Place 2 1/2 cups chocolate chips* in a medium heat-proof bowl and set aside. Heat 1 cup of heavy cream* in a small saucepan over medium heat until it gently simmers. (Do not let it come to a rapid boil – that’s too hot!) You’ll know it’s ready when the cream forms tiny bubbles around the edges of the pan, then remove it from the stove.
Pour the hot cream over the chocolate chips. Let sit for 2-3 minutes, gently softening the chocolate. Slowly stir with a metal whisk, spoon, or rubber spatula until thoroughly combined. The ganache should be smooth with no chip portions remaining.
Finally, pour the prepared ganache over the strawberries on top of the brownies, smoothing it into an even layer across the pan to smother everything.
Refrigerate the brownies until the ganache is set, about 15 minutes. Remove the brownies from the pan by gently lifting the parchment paper’s wings that extend above the edges of the brownie pan. Slice the brownies into 2x2-inch squares and serve cold. Store* in the refrigerator for up to five days or in the freezer for up to a month.
