This one-skillet pork chop and veggies dinner is perfect for busy weeknights! It minimizes cleanup and maximizes flavor in a scalable dish that ticks all the boxes for a quick, easy, and delicious all-in-one pan stovetop dinner. Hearty and nutritious, the recipe combines savory, thick-cut seared pork chops, skin-on red potatoes, and sweet carrots in a creamy mushroom gravy sauce for a well-balanced meal without the mess!
Equipment
Cast Iron Skillet
Cast Iron Skillet Lid
Cutting Board
Utensils (Cooks Knife, Tongs, Measuring Cups and Spoons, Large Spoon)
Ingredients
2 tablespoons Butter
4 (6-7 ounce) thick-cut pork chops (1 chop per person)
Salt and Pepper
3 medium Carrots (cut into 1-1/2-inch pieces)
3 medium Red Potatoes (cut into small wedges)
1 can gluten-free Creamy Mushroom Soup (18-ounce) I used Progresso Creamy Mushroom Soup
Fresh ground pepper and chopped Parsley to garnish for serving (optional)
Instructions
Season the pork chops with salt and pepper on both sides and set aside.
Heat a large cast iron or heavy skillet over medium heat and add the butter.
Sear the pork chops on each side for 2-3 minutes until golden brown. When browned, transfer them to a plate and cover to keep warm. Reserve the drippings.
Sauté the carrots and potatoes in the same skillet over medium heat in the reserved drippings until they soften, becoming lightly browned and slightly crisp on the outsides, about 3-5 minutes.
Add the creamy mushroom soup [1] to the skillet and stir it into the vegetables. Reduce the heat to a simmer and cover with a lid. Cook the vegetables until they are fork-tender, about 10-12 minutes.
Return the pork chops to the vegetable mixture, cover, and cook until an instant-read thermometer inserted into the pork reads around 140°F (+/—a degree or two). Depending on the hotness of the mixture, this should only take about 6-8 minutes.
Remove the skillet immediately from the heat and let stand, covered, for about 5 more minutes until the internal pork temperature in the thickest part of the meat increases (the pork will continue cooking) to 145-150°F (for medium-rare). [2]
If desired, sprinkle the dish with fresh ground pepper and chopped parsley. Serve right away.
Kitchen Notes:
[1] Please note that you DO NOT add water to Progresso Creamy Mushroom Soup.
[2] Today’s pork is very lean, so it is essential not to overcook and follow the recommended cooking temperature. The previous belief that when you cook all pork chops, you must cook them to 160°F until they are beige throughout has primarily disappeared.
Before 2010, the USDA guidelines recommended that pork be thoroughly cooked to 160°F to eliminate all harmful bacteria, resulting in a dry and tough texture. However, today’s home cooks understand that a temperature of 145° to 155°F (medium-rare to medium) ensures the maximum flavor for tender and juicy pork chop perfection.
To ensure your pork chops cook correctly, insert a probe thermometer into the thickest part of the meat to check the temperature. After cooking, allow the pork chop to rest for five minutes before serving, as it will continue to cook slightly during this time. When slicing the pork chop, you should observe a mostly beige interior towards the outer edges with a hint of pale pink in the center and a juicy texture.
A Quick Pork Fact
The recommended temperature for pork doneness applies to all pork cuts except ground pork, which should cook to 160°F. So, whether you’re grilling bone-in loin chops or oven-roasting pork tenderloin, 145° to 155°F is the perfect temperature to aim for.
